Coffee Harvest Seasons

Thinking of coffee as fresh produce that comes in and out of season is a new idea for most coffee drinkers. But as you learn to appreciate the distinct flavors of seasonal coffee, you may start to notice those flavors fade slightly as the crop year progresses. We find most crops hold their flavor for about nine months, but each bean is different so some may fade sooner, some later. When a coffee fades to the point it no longer yields a great cup, we consider it to be "out of season". There's no predicting the exact date any one coffee fades but here, as a rough guide, are some average harvest times. Exact coffee harvest dates can vary due to weather, and all coffees require some time to "rest" before they are ready for roasting.
