Organic
La Amistad Estate

For more than 60 years, La Amistad has been a pioneer in socially and environmentally sustainable coffee production, long pre-dating the recent development of certification seals. Included within the parameters of the roughly 25,000 acre estate on the Panamanian border are 22 small family farms which were given to neighboring families in 1940 by estate founder Jorge Zeledón Castro, grandfather of the current owners. La Amistad ensures these farmers a premium price for their organic, high quality beans. The remaining 95% of the estate's land is dedicated to rainforest conservation, research and an ecolodge, and is home to quetzals, jaguars, monkeys, tapirs, more than 400 species of birds, and some of the world's rarest butterflies. It forms part of UNESCO's Amistad Biosphere Reserve.

Hints of chocolate covered cherries pervade both the aroma and flavor of this very full bodied coffee, ending with a fruity yet clean, dry, tannic finish. We have offered this wonderful coffee for several years now, and each year it sells out, as its increasing popularity outstretches availability.

Organic
Chiapas HG
Union de Ejidos Prof. Otilio Montano (UDEPOM) Cooperative

The Sierra Madre region of Chiapas in southern Mexico, where this coffee is grown, is plagued by poor infrastructure, unemployment, illiteracy, and short life expectancy. These problems were compounded in October 2005 when Hurricane Stan triggered floods and mudslides that collapsed bridges, destroyed roads, and devastated that year's crop. The UDEPOM coop's beneficio was condemned after filling with two feet of water and mud. Today the area is still recovering. The 620 coop members, almost 99% of whom are from indigenous tribes, have a new beneficio and a fabulous crop. Each farmer is paid on a work-share basis, not by the volume his or her own farm yields. The value of the work-share increases as each farm becomes fully organic and the harvest commands a higher price.

This coffee is a mix of Typica and Bourbon varietals. It is washed and sundried on patios, some of which are located on the roofs of the farmers' homes. The aroma is sweet with flavor notes of chocolate, toasted nuts and just a hint of citrus. It has nippy acidity along with a syrupy, full body and closes in a long, nutty finish. HG stands for High Grown.

Peaberry
Kimel Plantation

Sweet, fruity aroma mingles with soft orange and apricot flavors, sparkling acidity, light body, and a clean citrus finish.

Founded in 1974 in the Western Highlands of the Wahgi Valley, the Kimel Plantation is owned and operated by the indigenous Opais tribe. The estate practices ecologically friendly farming through the use of organic fertilizers, and is devoted to caring for its 400 member workforce by providing a school and medical facilities for them and their families.

"Intense, rich, deeply sweet aroma: dark chocolate, aromatic wood, a hint of fruit. In the cup balanced acidity, silky to lightly syrupy mouthfeel, and continued dark chocolate with a sweetly tart orange-toned fruit that becomes more pronounced as the coffee cools. Some chocolate carries into a rich, very slightly astringent finish."
