To create our award winning coffees, we begin with beans of uncommon "cup" quality, a roastmaster's term for the body, acidity, flavor and aroma that together make a great cup of coffee. Next, we give priority to farms with a strong commitment to fair labor and the environment. We custom roast our final selections in small batches, under the watchful eyes of skilled artisans. Then we scrutinize the results. If the coffee's not impeccable, we'll throw it away — but we won't put our name on it. {More»}
